This wine has a deep ruby red color with violet hues, which can develop into a darker, almost black hue with age.
The bouquet is intense and complex with prominent notes of black cherries, blackcurrants and plums, which are characteristic of Cabernet Sauvignon. From the soil and climate of Castelli Romani, undertones of wild herbs, dried flowers and spices such as licorice and black pepper are added.
On the palate, the wine is full and strong with a good balance between fruit and acid. The black fruit notes from the aroma return and are complemented by the taste of dark chocolate, tobacco and a touch of vanilla from the aging in oak barrels. The tannins are firm but well integrated, which gives the wine a pleasant structure and a long, persistent aftertaste.
The Castelli Romani region is characterized by volcanic soil, which contributes to the wine's minerality and complexity. The mild Mediterranean climate with hot summers and cool nights allows the grapes to ripen slowly, resulting in a depth and richness of taste.
It goes well with grilled meat, especially steaks and lamb chops, but also with rich pasta dishes with meat sauces, game dishes and mature cheeses.
